This vegan egg salad with fresh chives by foodblog Vegan Blueberry is ready in minutes and tastes so real, I think most omnis wouldn’t even notice the difference.
I usually make only half the amount (original recipe is for 6 servings) and all you need is chives, vegan mayo, tofu, nutritional yeast, onion powder, black salt (important), mustard and kurkuma.
I like to decorate the salad with radish sprouts or alfalfa.
My Hokkaido Za’atar Focaccia goes very well with it, or it makes a great sandwich to take with you.
